  • Banana Nut Bread


• 1 ¾ cup all-purpose flour
• 1 tsp. baking soda
• ½ tsp. baking powder
• ¾ cup sugar
• ½ cup vegetable oil
• 2 tsp. vanilla
• 2 eggs, lightly beaten
• 1 cup mashed ripe banana pulp
• ½ cup chopped walnuts

Preparation 

1. Combine flour, soda, and baking powder in a large mixing bowl.
2. Blend together sugar, oil, and lemon rind. Mix well with flour mixture.
3. Add eggs and banana pulp. Thoroughly combine, mix in nuts.
4. Turn batter into a greased 9 x 5 x 33 inch bread pan and bake in a pre-heated 350 degree oven for 1 hour.
